Pumpkin Spice Whoopie Pies…of luuuvvee. ;)

Whoopie Pies(Recipe adapted from a recipe by Confessions of a CookBook Queen

1/2 can of Pumpkin Puree

1 stick of unsalted butter

1 box of Duncan Hines Spice Cake Mix

2 large eggs

1/2 cup milk

-Bake at 350 on an ungreased cookie sheet covered with parchment paper(NOT WAX PAPER!) for 17 mins or until they tan on the edges.

-Let cool completely on wire rack.

Cinnamon Cream Cheese Filling(Adapted from a Martha Stewart Filling Recipe)

1 package of Philadelphia Cream Cheese

1 stick of unsalted butter

1lb of powdered sugar

2 teaspoons Vanilla Extract

1 teaspoon McCormick Roasted Saigon Cinnamon

2 Tablespoons milk

-Blend on low until combined, then on high until smooth and creamy.

    So we just form it into balls and put them on the cookie sheet? How many does that make? I’m so doing this on Sunday just so you know.

      I made 48 of the cookies or 24 whoopie pies when assembled. I used a small ice cream scoop that is about 3/4 ounces. It is about the size of a large marshmallow or cotton ball. If you don’t have that size ice cream scoop I would use a rounded tablespoon. ALSO 3 INCHES APART ON THE BAKING SHEET!!!
