Cranberry Chocolate Chip Whoopie Pies
1 box of Red Velvet Cake Mix
2 Large Eggs
½ cup Lactaid Calcium Enriched Lactose-Free Milk
½ cup Cranberry Juice
¼ cup Vegetable Oil
1 cup dried Cranberries
1 cup Chocolate Chunks or Chips
-Preheat oven to 375 degrees. Portion out in about quarter size circles or use ¾ oz ice cream scoop. Bake for 12 minutes.
-Allow the cookies to settle on the baking sheet a few minutes and then remove. Let cool on a rack.
Vanilla Bean Buttercream
½ stick of Unflavored Vegetable Shortening
½ stick of Unsalted Butter
About 2 lbs of Powdered Sugar
3 Tablespoons Lactaid Calcium Enriched Lactose Free Milk
1 Tablespoon Vanilla Extract or Vanilla Bean Paste
-Combine on low and then whip on high. Prepare a disposable piping bag with a piping tip. Fill each whoopie pie with about a quarter of filling. Serve or package them as mini gifts.
