1 box of Duncan Hines Lemon Supreme cake mix
1/3 cup vegetable oil
1 tablespoon fresh lemon juice
1 15oz can of lemon pie filling, the best you can get
-Preheat your oven to 350 degrees. Mix all of the ingredients in a standing mixer on medium. This is a very dense batter.
-Using your choice of ice cream scoops, portion out balls about 2 inches apart on an ungreased cookie sheet.
-Place a dollop of the lemon pie filling in the center of each ball of batter.
-Bake for about 7-8 mins, add a minute more at time. You need to look for the edges tan and they are puffy. Place the tray on the stoe and let sit for a few mins. The cookies shrink down and crack like meringue cookies. Let cool and enjoy!
