This beautiful cupcake is how I spent my fourth Mother’s Day. Some may think it is odd that I enjoyed making a cupcake out of beer for Mother’s day but follow along.
When Food buzz sent me an Email about making a recipe including Fat Tire Amber Ale I was ecstatic! Fat Tire is close to my heart. It was a milestone along my path as a new mom. In Spring of 2007 life was confusing, we moved to California and found out we were pregnant. We had to change the way we lived pretty drastically. We spent money without thinking about the future and, other than bills, had little responsibility. With a child on the way we had to take a serious look at our finances and habits. Smoking was definitely out, we had to go into credit counseling or we would be headed for severe credit issues, no more going out for crazy nights with our friends. We changed my diet due to the baby and without very much money I was not able to splurge on stuff anymore. We even went to ‘Free Food Friday’ at the Officer Club to stretch our budget.
After Mikey was born I was allowed to have one beer while breastfeeding to help with milk production. This is when I had my first Fat Tire and liked it. It became my new celebration on Friday when we went to eat and see our friends. I had my one Fat Tire, enjoyed our meal and went home happy. In the Spring of 2008 we moved to North Dakota and out of the area where New Belgium Brewery delivered Fat Tire.
But the experience is how I feel into my new role as a mother. I understood all the sacrifices and benefits, but it was also important to steal a moment for yourself. Fat Tire was my moment.
Last month, Fat Tire has shown up in North Dakota! It is now at the Garage Lounge and a gas station in Velva. I even got Fat Tire and Flowers from my husband for Mother’s day! I am so excited I felt it was time to celebrate my way->It shall be a cupcake!
Fat Tire Apple Butterscotch Cupcakes!
1 box of Duncan Hines White Cake Mix
3 large eggs
1 1/3 cup Fat Tire Amber Ale(Be Careful if you substitute because of the flavors of different beers)
2 Tablespoons Vegetable Oil
1 Teaspoon McCormick Ground Cinnamon
1/4 cup diced Glory Fried Apples-soak the apples in enough butterscotch schnapps to cover in a bowl, when dicing-make sure you get rid of any rough centers on the apples
-Preheat your oven to 350 degrees and set up your 24 cupcake liners, I chose orange because of the bottle top design.
-Start with mixing the eggs until foamy, add the flat beer and then the oil. It will be golden and bubbly! Then add in the powdered mix.
-Portion half of the batter you want in the cupcake liners, add in 1/2 teaspoon of diced apples, top with the rest of the batter. I used a 3/4oz scoop for the bottom and top portions of batter and it looked good. Never fill a liner more than 2/3 of the way up.
-Bake for about 19 minutes or until a toothpick comes out clean. Cool completely.
Fat Tire and Butterscotch Schnapps Buttercream
1 stick of softened unsalted butter
1/2 cup Crisco shortening
1/2 cup Fat Tire Amber Ale
1 Teaspoon Butterscotch Schnapps
2 lbs of Powdered Sugar, depending on taste and how stiff you want your buttercream.
-Blend all the butter, Crisco, Fat Tire and schnapps together until smooth. Tasting as you go, then add in the powdered sugar slowly until you have the texture you need to pipe your buttercream. I add the entire bag and it was still a little loose.
-To decorate I piped the buttercream around the sides in a flower shape leaving the center for more diced apples. I then melted about a 1/2 cup Butterscotch chips and drizzled over the flowers! I love how the orange cupcake liner and the orange in the butterscotch matched perfect.
I want to Thank Foodbuzz and New Belgium for the opportunity to celebrate my Mother’s Day with their delicious beer by giving me the funds to create this recipe. I had a great time and can not stop eating these! If I could, they would be in the hands of UPS on their way to both companies but I think my husband may not part with a single one! no crumb left behind!
